ITALIAN PASTA Recipe | Main Course Recipe by Shilpa Suryavamshi |
| INGREDIENTS | 100 gms Pasta
2tbsp Olive oil
4 Garlic flakes - sliced
2 Red chilies
2 Tomatoes / cup of plain tomato sauce
Or cup of Italian tomato sauce
1 Eggplant / potato sliced
25gms Grated cheese / parmesan cheese
Salt to taste | METHOD | 1. In a large skillet heat olive oil, add broken red chilies, sliced garlic.
2. Saute eggplant until tender add salt and stir. Add tomatoes, and add salt if required.
3. Reduce heat to medium low, and cook for about 8 minutes. Meanwhile, add pasta to the boiling water, add little salt and ½ tsp of olive oil.
4. Cook for 8 to 10 minutes or until it is done and drain. Toss pasta with the above sauce. Top with the grated cheese.
5. If required, add basil / garlic / roasted pepper flavored olive oil. |
