PALAK(SPINACH) SAMOSA Recipe

  INGREDIENTS
For pasrty:
1 cup mida( All purpose flour)
4 table spoons oil
salt to taste
1/2 bunch palak or spinach(stamed and blended to paste)

For Filling
boiled potato cubes - 1 cup
boiled(green peas,green beans,carrots) - 1 cup
2 tea spoons oil
salt to taste
garam masala powder -1/2 tea spoon
amchur(dry mango poweder)-1/2 tea spoon(optional)
chilly powder,,turmeric - 1/2 tea spoon each
oil for frying samosas
leamon juice according to your taste
Note: One can use any filling of their choice!

  METHOD
Heat oil(4 table spoons) till hot and add it to the mida and rub the flour with both the hands.
Add salt,spinach paste and with out adding any water knead it to a medium soft dough(not too soft or hard)
Keep this aside till you make the filling.
Filling:
Put oil in a pan and when the oil is hot add all the ingredients one by one and mix well such that they blend in well.switch off the stove add lemon juice mix it and cool.
Make lemon size balls of above filling and keep aside.

For Samosas:
Divide the dough into lemon size(or desired size) balls and roll them into round chapati's.
when you are done rolling all the dough place the chapatis one over the other(stack them) and cut into semi-circles at one shot.
Now take a semi-circle fold it into a cone shape close the edges by applying water put the filling into the cone and close it to form a samosa.
Fry them in hot oil till crisp.
(or)
Roll all the samosas and grease a plate with little oil put all the rolled samosas and chill them in fridge till you are ready to fry.
Fry them in hot oil when you are ready.
Serve them hot with chutney of your choice(garlic,green,imly,onion,ketchup etc...)
Note:You can store the rolled samosas in fridge and fry only the quantity you need,they can stay upto 4 days in fridge and if you would like to freeze them wrap them indvidually in plastic wrap and freez. When ready to fry thaw them to room temp before frying (freezed ones).
