CORIANDER CRISP Recipe | Starters and Snacks Recipe by Vidya |
| INGREDIENTS | Fresh coriander leaves,finely chopped 2 1/2cups Besan 4 tablespoons
Bajri flour 4 tablespoons
Wheat flour 1 cup & 1\2 cup for dusting/preparation
Rise flour 2 tablespoons
Salt to taste
Ajwain 1\2 tablespoons
Jeera powder 1\2 tablespoon
Red Chilli Powder 1 tablespoons
Green Chillies 1 small or as per taste
Garlic 4-5 pices
Ginger small piece
Water to make dough
Oil for frying
| METHOD |
1. Make fine paste of green chillies, ginger, garlic
2. In a big bowl take finely chopped fresh coriander leaves
3. Add all the flours (besan, bajri, wheat, rise), salt, ginger garlic paste, jeera powder, ajwain, red chilly powder
4. Make dough adding little water as needed, the dough is not like Roti dough, it is soft. Don’t add much water at start otherwise you need to add more flour to make dough, this dough requires very little water.
5. When dough is ready apply some wheat floor on hands and take handful mixture from the dough, roll it on hand and make it like kababs & keep aside, make more rolls from the remaining dough.
6. For cooking grease a bowl with oil (you can also use cooker burtan) and put all the rolls in it. In a cooker or pan pour some water and place the bowl in middle of that cooker or pan and close it with lid. For cooker take 2 whistle and in pan heat the rolls till properly steamed.
7. Cool the steamed rolls and after cooling cut them in round shape, you will get 4 to 5 small round pieces from a roll.
8. Heat oil in a Kadhai or pan and fry the rounds till golden brown & serve hot with sauce or chutney or have as it is.
9. If you don’t want to fry, you can also fry them in a non-stick pan with little oil for sometime.
